Guidelines on How to Brew Nica's Gourmet Coffee
 

Coffee's spread came along with the development of middle ages civilizations, which makes impossible to tell its origin. The most famous legends about coffee's discovery are attributed to the use of coffee as medication and Kaldi's legend, which is the most widely known story.

According to this tale, a lad named Kaldi noticed the strange behavior of his goats after they ate a small bush leaves and fruits, similar to cherries. The goats were jumping around very excitedly and full of energy. The goatherd tasted the bush leaves and felt the same energy rush.

Seeing this bush as an extraordinary discovery, Kaldi took some fruits and branches to a monastery. He related to the Abbot about his amazement when the goats ate the leaves. The Abbot cooked the branches and the red berries; the result was a very bitter drink that he threw immediately to a bonfire .

When the cherries fell in the flames, they began to boil. The green peas in their interior produced a delicious aroma that made the Abbot prepare a drink based on the roasted fruits. That is how the coffee drink we enjoy everyday was created. The coffee beans and the drink were considered from then on an exceptional stimulant.

Different legends have attempted to explain coffee dispersal throughout the world but they all agree in one thing: when they highlight coffee's importance in the human life.

What is only certain about Kaldi's legend is that the coffee consumed in Abyssinian plateaus, where it grew in wild form, belonged to the species Arabica.

This species, the finest variety in the world, was taken from Ethiopia, passed to Arabia and India, probably through Muslim pilgrims that traveled for The Hajj since the pilgrimage routes were shaped at the same time as commercial routes.
